  • 2 ripe Bananas, sliced and frozen preferably sliced before freezing for easier blending
  • 2 tablespoons Peanut butter creamy and slightly salty
  • 2 tablespoons Jam (strawberry or raspberry) bright fruit flavor, optional chia seed jam for added fiber
  • 1/2 cup Coconut milk full-fat for richness, or light for less intensity
  • optional Honey or maple syrup for added sweetness, if desired
  • granola, berries, or nuts as desired Toppings for crunch and visual appeal

Equipment

  • Blender
  • Small saucepan
  • Spoon
  • Bowl

Method

  1. Place the frozen banana slices into your blender and add the peanut butter, jam, and coconut milk.
  2. Blend on high speed for about 30 seconds until the mixture is thick, smooth, and creamy, with a glossy appearance. Stop and scrape down the sides if needed.
  3. Taste the blend and if you'd like it a bit sweeter, add a drizzle of honey or maple syrup, then pulse a few more seconds to combine.
  4. Spoon the thick, creamy mixture into a bowl, smoothing the top with the back of a spoon for an even surface.
  5. Top the smoothie with granola, fresh berries, or nuts for added crunch and color.
  6. Let the bowl sit for a minute to settle, then serve immediately with a spoon, enjoying the thick, nostalgic flavor with each spoonful.

Notes

Feel free to customize toppings and ingredients, swapping in almond butter or different jams for variety. Using frozen bananas is key for that ice-cream-like texture, but fresh bananas can be used if you prefer a runnier consistency.
